Cupcakes

Ok it's cold, snowing even and we're struggling to entertain the little ones. Well Betty recently discovered cooking and we've been experimenting with cupcakes. It is also my new years resolution to cook a bit more from scratch. The great thing about this is, that for a toddler a cake is a cake and you can trick them by making healthy ones. Below we've made chocolate cupcakes with a creme fraiche & chocolate filling and potato ones.  I will not post any recipes on here, you can find plenty online. We're using large John Lewis silicon cases. They are great, because as soon as the cupcakes have cooled down you just  take them out, put them it an air sealed dish and you reuse the cases straight away. You can also freeze the cupcakes. Or maybe you want to start your own cupcake business.

Porridge

New year, new resolution?  Well we thought we share our favourite porridge recipes with you. Porridge is healthy and keeps you full for long.
You can use porridge oats or instant porridge. If we're doing proper porridge soak it overnight in milk, so it's a bit quicker in the morning. We use about 50g for the mummy, 30g for the toddler.
You can either microwave it or stir it on the stove. If you're putting it in the microwave do about 4 x 2 minutes, stirring and resting it a bit in between. Add milk as required.  Make sure the microwave dish is big enough, because the porridge will expand.
If you're using instant porridge the whole process is a bit quicker and the final result is smoother. Up to personal preference.
I think as toddlers discovering their sweet tooth and starting to ask for treats, it's a good idea to leave sugar out of regular meals where you can.

Summer fruits porridge (see photos):

As above, just stir a couple of table spoons of summer fruit (from frozen) in. you can use any fruit that's in the freezer department and of course will work with with fresh fruit. Squeeze the fruit with the spoon, gives it a crazy colour!

Apple porridge:

Grate an apple into the porridge just before you cook it. The apple will cook with the porridge. Betty has pretty much just that, but if you have a more refined taste, add cinnamon, maple syrup and sugar. Again up to taste.

Christmas Jumpers

Friday 14th December is Save the Children 'Christmas jumper day'  in the UK. We thought this would be a suitable day to launch Betty's blog.
